Mother's Day can be hard to plan and hard to pull off if you don't have a direction. This is a beginning, you can personalize as needed.

The perfect Mother's Day should start off with coffee followed by a nice brunch. Be sure to make enough that you can snack for the day until dinner, because you don't want mom worrying about what's for lunch. The recipes you find below are easy and pull off a great table. Set the table with nice, bright settings in your mom's favorite color. Leave them there for the day, so dinner will be easy.

Chocolate Drizzled French Toast

Ingredients:

  • 1 loaf of bread
  • 8 eggs
  • 3 tsp cinnamon
  • 1 tsp nutmeg
  • 3 tbsp water
  • 2 cups chocolate chips
  • Strawberries (optional)

Crack eggs into a bowl, add water, cinnamon, and nutmeg. Whip until eggs are a creamy color. Dip bread into egg mixture and fry in a skillet. Meanwhile, melt chocolate chips in a double boiler or in the microwave, stirring often. Drizzle chocolate over french toast and garnish with a strawberry.

Ham Steaks

Cut ham into 1/2 inch thicknesses and place them on a cookie sheet. Place in oven on 350 degrees for about 10 minutes. Do not let the ham steaks dry out. Drizzle with maple syrup if desired.

Cheesy Egg Dish

In a nonstick stew pan, place one dozen eggs. Add 1 cup cubed cheddar cheese, and cook until the eggs are done, stirring often.

Fruit Salad

Cut fresh fruit of your choice. Place in a bowl and add honey and lemon to taste. Garnish with fresh mint leaves.

The total time for this brunch should be about 30 minutes. Make the fruit salad before you start the other dishes and place it in the fridge to chill.

After brunch, play games as a family, curl up and watch a movie, or treat mom to a shopping trip. You could also take a walk or give her a few hours to herself (especially nice if her children are small). Don't be gone to long though, she will start to miss all of you.

Dinner should be an easy affair. Everyone is ready to wind down by dinner time, so here is a simple and delicious meal that is not hard to make or hard to clean up. Mom will like it that she does not have to do all the cleaning the next day.

Creamy Chicken Enchiladas

Ingredients:

  • 1 1/2 cups sour cream
  • 1 cup salsa
  • 2 cups cubed chicken
  • 2 tsp chili powder
  • 1 can green chilis
  • 10 tortillas
  • 2 cups shredded cheddar or Mexican blend cheese
  • 2 chopped tomatoes
  • Jalepenos (optional)

In a mixing bowl, mix the first 5 ingredients. Fill the tortillas and place them in a casserole pan. Cover with cheese and place in oven until warm. Top warm enchiladas with tomatoes and jalepenos.

Salad

Ingredients:

  • Romaine or Red Leaf lettuce
  • 1 can of black beans (drained)
  • 1 cup crushed tortilla chips
  • 3 medium tomatoes, cubed
  • 1 cup cheddar cheese
  • 1/2 cup salsa

Mix all ingredients together and toss

Chocolate Cake

You can make a cake from a mix and decorate it in a Mother's Day fashion. What a treat to end Mom's day! Have fun.
